Great Chinese teas are categorized into these six main families: greens, oolongs, blacks, whites, yellows and post-fermented tea. Each family is subdivided into various subgroups or types by variation in production methods, tea plants and origins. Out of the maze of these hundreds of variations, Oolongs are my favourite, for the obvious reasons of its distinctive characters and great spectrum in taste and health benefits. Great oolongs are, up to day, products of labour devotion and passion for perfection.
The oolongs are a family of tea characterized by a partial oxidation process that is controllably stopped by heat. It has the benefits and tastes of both the green and the fully oxidized black teas.
Some of the oolongs are so very lightly oxidized that are somewhat like green tea. One example is the original Iron Kuan Yin light. Some are more oxidized and have a balanced salutary content makeup, such as the Phoenix Supreme Oolong.Some have charcoal finishes that our European friends refer to as their morning coffee substitutes, such as theBig Red Robe. Some expert would even age strong oolongs for 3 years or more; they prefer the mellow taste and aroma, and the milder nature that is friendlier to stomachs.
